HARVEST By hand, from Sept 20th to October 8th. Selection.
50% of the grapes are picked at the beginning for strength
50 % picked at the end of the harvest , to preserve fruit and aroma
PRODUCTION  Grapes are directly put in a pneumatic press,
Fermentation in wood barrels for 5 to 6 months.
TASTE Golden colour with reflection of green, pale, luminous. Smoky nose, intense, mineral, gunt flint then flowered with hazel nut and roasted almond notes . Fresh butter and volume in mouth are the keynote of this voluptuous wine.
TO EAT WITH Mediterranean fish dishes when young.
Fine poultry and goat cheese when older.
